(not a holiday) The day before the Christian period of Lent (=the 40 days before Easter). In Britain people make and eat pancakes, a type of thin flat cake. Mardi Gras (in some Christian countries) a celebration before the beginning of Lent, in which there is a lot of public enjoyment, including dressing in special clothes, dancing, eating and drinking, often in the road, or any large public event of this type.
The Mardi Gras festivities in New Orleans last several days, with parades, costume parties and music.
