Historical Development of Gastronomy

The kitchen is a place where all kinds of food are prepared, cooked and sometimes consumed due to the nature of the business. The kitchen is the heart of a business. For this reason, its location and plan in the building is very important. In addition to providing a better service to their guests, tourism operators and investors also attach importance to kitchen planning and benefit from the opportunities of developing technology to the highest extent. Thus, unnecessary details and differences in the kitchen are further reduced. The historical development of cuisine is a very broad and comprehensive subject. Because nutrition is the most natural need of human beings, this development includes the same process as human history. Assumptions show that prehistoric humans ate fruit, plant roots and animal flesh and lived in caves. They have provided their nutritional needs in various ways, albeit in a primitive way. This situation continued until the discovery of fire, which marked the rise of human history and was a turning point. With the invention of fire, they also learned and developed the methods of cooking food. These dishes started the art of cooking and talking about the kitchen. The first kitchen of civilization; it was integrated with the places where people lived. Cuisine comes from the Turkish word matbah. The word matbah means the place where food is cooked and it has taken its place as a kitchen term over time. The term cuisine can be defined in two ways. One of these definitions is related to culinary culture and the other is related to the physical space of the kitchen. We can define the kitchen in various ways. E.g; The kitchen is a culture that shows the tools and equipment used in the preparation of food and beverages, the tricks of cooking, and food ceremonies. It is also the food and beverage types that provide nutrition and the process of their preparation, cooking, storage and consumption. Developments, inventions, discoveries that people have encountered throughout history; influenced their lives and cultures. Therefore, these developments have also affected the cuisine, which is a part of their culture. Thus, the cuisine has gone through a development process from the prehistoric foraging and hunting-based nutritional behaviors of people to the commercial kitchens of today's hotel businesses and restaurants.

In 1835, gastronomy entered the French culinary dictionary as "the art of eating well" (Shahrım, 2006). After the development of cuisine and restaurant business in France, restaurants started to open in other European countries and in America.
