Starch or amylum is a complex carbohydrate. It is made of many glucose units joined by chemical bonds. This polysaccharide is produced by most green plants as an energy store. Starch is a white powder that is tasteless and odorless. Worldwide, it is the most common carbohydrate in human diets, and is contained in large amounts in staple foods. The major sources of starch intake worldwide are the cereals (rice, wheat, and corn) and the root vegetables (potatoes and cassava).

Corn starch (or corn flour, sometimes also called maize starch) is the starch taken from corn grain. It is used in many ways, mainly in the making of corn syrup, other sugars, snack foods, sweets and beer. Corn starch is a common food ingredient, often used to thicken sauces or soups, and to make corn syrup and other sugars. Corn starch is versatile, easily modified, and finds many uses in industry such as adhesives, in paper products, it may also be used as an adhesive in book and paper conservation. It is also used for starching laundry and for industrial uses. It has medical uses as well, such as to supply glucose for people with glycogen storage disease.


Potato starch is starch extracted from potatoes. Potato starch is a refined starch, containing minimal protein or fat. This gives the powder a clear white colour, and the cooked starch typical characteristics of neutral taste, good clarity, high binding strength, long texture, and minimal tendency to foaming or yellowing of the solution.
It is also used in non-food applications as wallpaper adhesive, for starching laundry, in paper coating and sizing, and as an adhesive in paper sacks and gummed tape.
